I love this brinjal pickle from The Chilli Project. I have bought numerous jars from Rick over the last 5-6 years. For me, it hits the sweet spot between flavour, heat and texture - especially with those gorgeous chunks of aubergine. We add it as an accompaniment to curries, but I have also found that adding it to natural yoghurt makes an excellent marinade for fried chicken.
Rich, full flavoured with just the right amount of heat. Served with cubes of lamb, lamb koftas, buckwheat, chickpeas, peas, broad beans and fresh salad as a nod to the eastern flavours. Just gorgeous and kicks the commonly found supermarket Aubergine chutney right to the kerb ! A hit with our family !
