A tropical twist on the classic Louisiana style, Hammerhead Hot Sauce uses fermented scotch bonnets for both heat and flavour. Its touch of pineapple balancing out their savoury fruit qualities with a subtle sweetness and complementing the oaky tang of apple cider vinegar with an acidity of its own.
This sauce is packed full of complexity, yet its ingredients are simple enough to splash over almost any dish. Even if it is particularly at home in a bloody mary, over pizza and fish or mixed with melted butter, to make an amazing wing sauce. Just be aware that, like most sharks, this one has a sharp bite, befitting its pepper-forward flavour.
