A thick and chunky Indian classic filled to the brim with softened slices of mellow aubergine. The perfect carrier for its intense spices and the gentle warmth of mild Kashmiri chillies. All paired with a subtle sweet and sour undertone from its tangy tamarind and dark muscovado sugar.
This Brinjal Pickle makes an amazing accompaniment to any curry, poppadoms or flatbread but is also equally at home over burgers or in a cheese or cold meat sarnie.
A taste so good that you'll soon take any excuse to polish off the jar!

Superb stuff! Love it! Had it on the side of a Thai green chicken and prawn curry last night and it was simply gorge and delish in equal measures! Lovely stuff.
Can I just say OH MY GOD that Brinjal Pickle is bloody perfect!!!! tried it on a cheese sandwich (the true test of any pickle) it was amazing . Used it in cooking , made a lovely addition to fried rice with some extra wild garlic leaves and spinach, perfectly balanced. Mate I would buy this weekly it is stonking!!! well done
I'll be honest, I only rarely enjoyed Brinjal Pickle, and even then only when it was the spectacular kind you got in a really good Indian restaurant. This FAR exceeds even that! The flavours are just wonderful, and while the spice has a nice kick, it doesn't linger and make you avoid eating more. It's quite thick unless the watery garbage you find in supermarkets so a little goes a very long way. Do yourself a favour and buy The Chilli Project's Brinjal Pickle. You won't regret it!
We’ve had it by the spoon, on pizzas, with fajitas, in spag Bol, in curries and anything else we can think of. The aroma is reminiscent of the spice markets in Durban, South Africa. The flavour has a depth that (in my opinion!) the original Garlic Naga Pickle lacks. Not that we dislike the Garlic Naga of course; although we have yet to try the updated version. But the Brinjal blows its socks off (not necessarily spice wise but has so much more flavour) and you don’t have to worry about your breath the next day! It is absolutely our new favourite and we’ve tried many Chilli Project Sauces over the years. On the negative side...I have two complaints: 1. My husband keeps stealing it (and doesn’t even like brinjals!) and 2. The jar is too small.
Wow what can I say about the Brinjal pickle other then its everything and more that I would want in an aubergine pickle.
The consistency is perfect soft and chewy.
Spice level is great and warming on the lips. Flavour is very tasty.
I'd happily buy a years worth straight away.
